INGREDIENTS:
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 medium onion, chopped
- Pinch of nutmeg (optional)
- ¼ teaspoon cayenne pepper
- 1 ¼ cups heavy cream
- 2 packages (9 ounces each) frozen chopped spinach, thawed and drained
- Salt and pepper to taste
- ⅔ cup shredded Parmesan cheese, divided
- 3 ounces cream cheese
- 2 tablespoons breadcrumbs

- Preheat the oven to 400 degrees F and grease a 2-quart baking dish.
- In a medium-sized saucepan, melt the butter over medium-high heat. Once melted, add the minced garlic and chopped onion. Cook, stirring occasionally, until the onions have softened, about 5 minutes.
- Add the nutmeg, cayenne pepper, and heavy cream to the saucepan. Simmer until the mixture thickens, about 5 minutes.
- Stir in the spinach, salt, pepper to taste, ⅓ of the Parmesan cheese, and cream cheese. Mix until well combined.
- Pour the mixture into the prepared baking dish and sprinkle the breadcrumbs and remaining ⅓ of Parmesan cheese over the top.
- Bake for 15-17 minutes, or until the top is golden brown and the cheese is bubbling.
