Texas Caviar Pasta Salad

Serves: 6 Prep Time: 5 minutes Cook Time: 10 minutes

INGREDIENTS:

  • 1 cup mayonnaise
  • 1 cup Italian dressing
  • 1 pound elbow macaroni, cooked and drained
  • 1 diced green bell pepper
  • 1 diced red bell pepper
  • 1 medium red onion, diced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons pickled jalapeños, drained and roughly chopped
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can black-eyed peas, rinsed and drained
  • 1 (15 oz) can corn, drained
  • 1/2 teaspoon ground cumin
  • 1/4 cup chopped fresh cilantro

  1. In a large bowl, combine the mayonnaise and Italian dressing, stirring until the mixture is smooth and well combined.
  2. Add the cooked and drained elbow macaroni to the bowl, along with the diced green bell pepper, diced red bell pepper, medium diced red onion, halved cherry tomatoes, chopped pickled jalapeños, rinsed and drained black beans, black-eyed peas, and drained corn.
  3. Sprinkle the mixture with ground cumin and add the chopped fresh cilantro.
  4. Stir all the ingredients together until they are thoroughly combined and coated with the dressing.
  5. Cover the bowl and refrigerate for at least 1 hour to enhance the flavors.
