  • 1 1/2 lbs lean ground beef
  • 1 packet taco seasoning
  • 1 (4.5 oz) can diced green chiles
  • 1/2 cup salsa
  • 1 cup cheddar cheese, grated
  • 1/2 cup Bisquick mix
  • 1 cup milk
  • 3 large eggs
  • Kosher salt and freshly ground black pepper, to taste
  • Freshly chopped cilantro for garnish

PREPARATION:

  1. To begin, preheat your oven to 400°F, and generously grease a 9-inch pie plate with nonstick spray.
  2. Place a skillet over medium heat and cook the lean ground beef until it’s no longer pink. Once cooked, be sure to drain off any excess fat. Season the beef by adding the taco seasoning, and give it a good stir to incorporate the flavors.
  3. Now, stir in the diced green chiles and salsa into the beef mixture, ensuring everything is well combined. Transfer this delicious mixture to the prepared pie plate, spreading it out evenly. Sprinkle the grated cheddar cheese evenly over the top.
  4. In a separate medium-sized bowl, whisk together the Bisquick mix, milk, and eggs until you have a smooth batter. Evenly pour this mixture over the beef and cheese in the pie plate.
  5. Take the pie plate and place it in the preheated oven. Allow it to bake until the top develops a gorgeous golden brown color. This typically takes about 25-30 minutes.
