  1. Begin by bringing a large pot of salted water to a boil. Add the spinach and cook until it just wilts, about 1 minute. Drain the spinach and rinse it with cold water. Once cooled, squeeze handfuls of spinach to remove any excess water, then chop them into 1-inch-wide strips. Set aside.
  2. In a large skillet over medium-low heat, melt the butter. Add the minced garlic and onions, and cook them until the onions become soft and translucent, which takes approximately 10 minutes.
  3. Stir in the flour and cook for an additional 2 minutes, stirring frequently.
  4. Gradually add the half and half, stirring continuously, until bubbles start to appear and the mixture thickens. Then, stir in the mozzarella and cream cheese until they melt. Season the mixture with salt, pepper, and nutmeg.
