FILLING:
- 9 cups peaches, thinly sliced (about 8 fresh peaches or 3 lbs)
- 1 tablespoon lemon juice
- 1/2 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons cornstarch
- 1/2 teaspoon salt
TOPPING:

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 12 tablespoons butter, chilled and grated
- 1/2 cup boiling water
CINNAMON SUGAR TOPPING:
- 1/3 cup granulated sugar
- 2 teaspoons ground cinnamon
PREPARATION:
- Preheat the oven to 425°F (220°C). Grease a 9×13-inch baking dish.
- In a large bowl, combine the sliced peaches, lemon juice, 1/2 cup sugar, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, cornstarch, and salt. Mix well and transfer to the prepared baking dish.
- Bake the peach filling for 10 minutes.
- In a separate mixing bowl, combine the flour, 1 cup sugar, baking powder, and salt. Add the grated butter and mix until crumbly.
- Stir in the boiling water until just combined (the batter will be lumpy).
- Remove the baking dish from the oven and drop spoonfuls of the topping over the hot peach filling.
- In a small bowl, mix together the remaining sugar and cinnamon for the topping. Sprinkle the cinnamon sugar mixture evenly over the topping.
- Return the baking dish to the oven and bake for an additional 25-30 minutes, or until the topping is golden brown and the filling is bubbly.
- Allow the peach cobbler to cool slightly before serving. Serve warm with a scoop of vanilla ice cream, if desired. Enjoy!
