Southern Peach Cobbler

Yields: 8-10 servings Prep Time: 15 minutes Cook Time: 30 minutes

FILLING:

  • 9 cups peaches, thinly sliced (about 8 fresh peaches or 3 lbs)
  • 1 tablespoon lemon juice
  • 1/2 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt

TOPPING:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 12 tablespoons butter, chilled and grated
  • 1/2 cup boiling water

CINNAMON SUGAR TOPPING:

  • 1/3 cup granulated sugar
  • 2 teaspoons ground cinnamon

PREPARATION:

  1. Preheat the oven to 425°F (220°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, combine the sliced peaches, lemon juice, 1/2 cup sugar, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, cornstarch, and salt. Mix well and transfer to the prepared baking dish.
  3. Bake the peach filling for 10 minutes.
  4. In a separate mixing bowl, combine the flour, 1 cup sugar, baking powder, and salt. Add the grated butter and mix until crumbly.
  5. Stir in the boiling water until just combined (the batter will be lumpy).
  6. Remove the baking dish from the oven and drop spoonfuls of the topping over the hot peach filling.
  7. In a small bowl, mix together the remaining sugar and cinnamon for the topping. Sprinkle the cinnamon sugar mixture evenly over the topping.
  8. Return the baking dish to the oven and bake for an additional 25-30 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Allow the peach cobbler to cool slightly before serving. Serve warm with a scoop of vanilla ice cream, if desired. Enjoy!
