Southern Fried Cabbage

Ingredients:

  • 1 lb bacon, chopped
  • 1 white onion, chopped
  • 2 cloves garlic, minced
  • 1 head green cabbage, cored and chopped into bite-sized pieces
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Kosher salt and freshly ground black pepper, to taste

Preparation:

  1. Heat a large skillet over medium heat and add the chopped bacon. Cook until the bacon turns crispy. Transfer the cooked bacon to a paper towel-lined plate to drain. Leave the bacon drippings in the skillet.
  2. In the same skillet, add the chopped white onion and cook until it becomes soft and translucent, which should take about 6-8 minutes. Stir occasionally to prevent burning.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the chopped green cabbage to the skillet, along with the paprika and, if desired, the optional cayenne pepper for extra heat. Season with salt and freshly ground black pepper.
  5. Continue cooking, stirring frequently, until the cabbage becomes tender, which usually takes around 8-10 minutes.
  6. Reintroduce the crispy bacon to the skillet and stir to thoroughly combine all the ingredients.
