Creamy Southwest Chicken Slow Cooker Delight

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 (10.75 oz.) can fire-roasted tomatoes and green peppers
  • 1 (10.75 oz.) can whole corn kernels, undrained
  • 1 (10. 75 oz.) can black beans, rinsed and drained
  • 1 (1 oz.) packet dry ranch dressing mix
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 (8 oz.) package cream cheese, at room temperature
  • Kosher salt and freshly ground pepper, to taste
  • Rice or cornbread, for garnish (optional)

Preparation:

  1. Begin by placing the boneless, skinless chicken breasts in the slow cooker. Season them generously with salt and pepper.
  2. Next, add the fire-roasted tomatoes, undrained corn, and rinsed black beans to the slow cooker.
  3. Evenly sprinkle the dry ranch dressing mix, chili powder, cumin, onion powder, garlic powder, and paprika over the ingredients in the slow cooker.
  4. Carefully place the softened cream cheese on top of the mixture in the slow cooker.
  5. Cover the slow cooker with its lid and set it to cook on low for 6 hours or on high for 3 hours.
  6. Approximately 20 minutes before serving, gently stir the contents of the slow cooker until the cream cheese is fully blended and the sauce is creamy. Remove the chicken breasts from the slow cooker and shred them using two forks.
