Scalloped Potatoes

Ingredients:

  • 4 cups thinly sliced potatoes
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 1⁄2 cups milk
  • 1 teaspoon salt
  • Dash of cayenne pepper
  • 1 cup grated sharp cheddar cheese
  • 1⁄2 cup grated cheese for sprinkling on top

Preparation:

  1. In a small saucepan, melt butter and blend in flour. Allow it to sit for a minute.
  2. Gradually add cold milk, stirring with a whisk.
  3. Season with salt and cayenne pepper.
  4. Cook the sauce over low heat until smooth and boiling, stirring occasionally with a whisk.
  5. Reduce heat and stir in the grated cheese.
  6. Arrange half of the sliced potatoes in a lightly greased one-quart casserole dish.
  7. Pour half of the cheese sauce over the potatoes.
  8. Repeat with a second layer of potatoes and cheese sauce.
  9. Sprinkle the remaining grated cheese on top.
  10. Optionally, add some paprika for color.
  11. Bake uncovered for about 1 hour at 350°F (175°C).
