Roasted Parmesan Creamed Onions

Serves 6-8

Ingredients:

  • 3 sweet onions, peeled and thinly sliced
  • 1 cup heavy cream
  • 1/4 cup white wine
  • 1/2 cup grated parmesan cheese
  • 4 tablespoons unsalted butter
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Kosher salt and freshly ground pepper, to taste

  1. Start by preheating your oven to 375º F.
  2. Place the thinly sliced onion rings in a 9×13-inch baking dish, ensuring that the rings and layers remain intact. Drizzle the onions with olive oil and season them generously with salt and pepper.
  3. Put the baking dish in the oven and roast the onions for about 15 minutes, or until they become softened.
  4. Once the onions are roasted, remove them from the oven and increase the oven temperature to 450º F.
  5. In a medium saucepan over medium heat, combine the heavy cream, white wine, butter, garlic powder, and cayenne pepper (if using). Cook until the butter melts, and bubbles form on the outer edge of the cream.
  6. Remove the cream mixture from the heat and pour it evenly over the pre-roasted onions. Sprinkle the grated parmesan cheese over all the onions.
  7. Cover the baking dish with aluminum foil and bake for an additional 20 minutes. Remove the foil and continue baking for an additional 5-10 minutes, or until the onions caramelize, and the cheese turns a lovely golden brown.
  8. After taking it out of the oven, let the Baked Parmesan Cream Onions cool slightly before serving. Enjoy!
