Ring-a-ling Sweet Rolls

For the Dough:

  • 4 to 4 1/2 cups all-purpose flour, divided
  • 1/2 cup sugar, divided
  • 2 teaspoons salt
  • 2 teaspoons grated orange peel (zest of 1-2 oranges)
  • 2 packets dry active yeast
  • 1 cup whole milk
  • 1/3 cup butter
  • 1 egg

For the Filling:

  • 1 cup powdered sugar
  • 1/3 cup softened butter
  • 1 cup ground almonds
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

For the Glaze:

  • 3 tablespoons powdered sugar
  • 1/4 cup orange juice

Preparation:

  1. In a large bowl, combine 2 cups of flour, 1/3 cup sugar, salt, orange peel, and yeast. Set aside.
  2. In a saucepan, warm the milk and butter over low heat until lukewarm. Add to the flour mixture along with the egg. Use an electric mixer to mix for 2-3 minutes. Stir in the remaining flour by hand until a stiff dough forms.
  3. Cover the dough and let it rise in a warm place for 35-50 minutes, until it doubles in size. Meanwhile, combine the filling ingredients and set aside.
  4. Roll out the dough into a 22”x12” rectangle. Spread the filling over half of the dough lengthwise. Fold the dough over to cover the filling. Cut into 20-22 strips crosswise, resulting in several short strips of dough. Twist each strip 4 or 5 times and shape them into swirls.
  5. Place the swirls on lined cookie sheets and let them rise again (covered) for 30-45 minutes. Preheat the oven to 375˚F. Remove the covering from the rolls and bake for 9-12 minutes.
  6. While the rolls are baking, prepare the glaze by combining the glaze ingredients. Brush the rolls with the glaze and return them to the oven to brown for an additional 3-5 minutes.
