Reuben in a Bowl

DRESSING:

  • 1 cup mayonnaise
  • 1/4 cup ketchup
  • 2 tablespoons sweet pickle relish
  • 2 teaspoons prepared horseradish
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

  • 2 tablespoons butter
  • 1 bag coleslaw mix
  • 1 pound sliced corned beef or pastrami
  • 1 cup drained sauerkraut
  • 1 cup grated Swiss cheese
  • 2 sliced green onions
  • 2 teaspoons caraway seeds

PREPARATION:

  1. Start by whisking together the mayo, ketchup, relish, horseradish, Worcestershire sauce, salt, and pepper in a small bowl. Place the dressing in the refrigerator until it’s needed.
  2. In a large skillet over medium-high heat, melt the butter. Add the sliced corned beef or pastrami and cook it until it’s nicely browned, which should take about 5 minutes.
  3. Add the coleslaw mix to the skillet and continue cooking until it’s tender but still crisp, about 5 minutes more. Stir in the drained sauerkraut and sliced green onion. Season everything with salt and pepper, and then top it with the grated Swiss cheese.
  4. Cover the skillet and allow it to cook until the cheese has melted and become bubbly, which should take approximately 3 minutes.
