- 2 tablespoons butter
- 1 bag coleslaw mix
- 1 pound sliced corned beef or pastrami
- 1 cup drained sauerkraut
- 1 cup grated Swiss cheese
- 2 sliced green onions
- 2 teaspoons caraway seeds
PREPARATION:
- Start by whisking together the mayo, ketchup, relish, horseradish, Worcestershire sauce, salt, and pepper in a small bowl. Place the dressing in the refrigerator until it’s needed.
- In a large skillet over medium-high heat, melt the butter. Add the sliced corned beef or pastrami and cook it until it’s nicely browned, which should take about 5 minutes.
- Add the coleslaw mix to the skillet and continue cooking until it’s tender but still crisp, about 5 minutes more. Stir in the drained sauerkraut and sliced green onion. Season everything with salt and pepper, and then top it with the grated Swiss cheese.
- Cover the skillet and allow it to cook until the cheese has melted and become bubbly, which should take approximately 3 minutes.
- Drizzle the salad with the prepared dressing, garnish it with more green onion, and sprinkle the caraway seeds over the top. Enjoy your delectable Corned Beef and Sauerkraut Skillet Salad!
