- 1 1/2 cups ripe bananas, mashed (about 3 medium)
- 1 cup Greek yogurt
For the Coffee-Infused Frosting:
- 1/2 cup (1 stick) butter, softened
- 3 cups powdered sugar
- 2 teaspoons instant coffee granules
- 2-3 tablespoons whole milk
Preparation:
- Begin by preheating your oven to 350°F and generously greasing a 9×13-inch baking dish with nonstick spray.
- In a large mixing bowl, use an electric mixer to cream together the softened butter, granulated sugar, and light brown sugar until the mixture becomes light and fluffy. Gradually add the eggs one at a time, ensuring thorough mixing after each addition, and then incorporate the vanilla extract.
- In a separate bowl, combine the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the butter mixture in thirds, alternating with the mashed bananas and Greek yogurt. Be sure to mix thoroughly after each addition.
- Pour the cake batter into the prepared baking dish and place it in the preheated oven. Bake until a toothpick inserted into the center comes out clean, which should take approximately 35-40 minutes. Allow the cake to cool completely on a wire rack.
- While the cake cools, you can prepare the coffee-infused frosting. In a medium-sized bowl, beat the softened butter with an electric mixer until it’s smooth. Gradually add the powdered sugar and beat until fully combined.
- Dissolve the instant coffee granules in milk, and then add this coffee mixture to the butter-sugar mixture. Continue to beat the frosting on high speed until it becomes light and fluffy.
