Ingredients:

  • 2 (8 oz.) packages cream cheese, softened to room temperature

  • 1 cup roughly chopped pecans
  • 1/2 green bell pepper, seeds removed, minced
  • 1/4 cup minced green onions
  • 1 teaspoon seasoning salt, or to taste
  • 1 teaspoon garlic powder
  • Freshly ground pepper, to taste
  • Crackers, for serving

Instructions:

  1. In a large bowl or using a mixer, combine the softened cream cheese with the drained crushed pineapple, minced green bell pepper, and minced green onions.
  2. Season the mixture with seasoning salt, garlic powder, and freshly ground pepper. Ensure that all ingredients are thoroughly mixed together.
  3. Place a medium-sized bowl and cover it with 1-2 large pieces of plastic wrap. Transfer the cheese mixture into the bowl, shaping it into a ball while wrapping it with plastic wrap.
  4. Refrigerate the cheese ball for 1-2 hours, or until it has set.
  5. Once set, spread the chopped pecans on a plate.
  6. Unwrap the cheese ball and roll it in the chopped pecans until the outer surface is completely coated.
