Ingredients:
- 2 (8 oz.) packages cream cheese, softened to room temperature
- 1 (8 oz.) can crushed pineapple, drained
- 1 cup roughly chopped pecans
- 1/2 green bell pepper, seeds removed, minced
- 1/4 cup minced green onions
- 1 teaspoon seasoning salt, or to taste
- 1 teaspoon garlic powder
- Freshly ground pepper, to taste
- Crackers, for serving
Instructions:
- In a large bowl or using a mixer, combine the softened cream cheese with the drained crushed pineapple, minced green bell pepper, and minced green onions.
- Season the mixture with seasoning salt, garlic powder, and freshly ground pepper. Ensure that all ingredients are thoroughly mixed together.
- Place a medium-sized bowl and cover it with 1-2 large pieces of plastic wrap. Transfer the cheese mixture into the bowl, shaping it into a ball while wrapping it with plastic wrap.
- Refrigerate the cheese ball for 1-2 hours, or until it has set.
- Once set, spread the chopped pecans on a plate.
- Unwrap the cheese ball and roll it in the chopped pecans until the outer surface is completely coated.
- Serve the pecan-coated cheese ball with an assortment of crackers and enjoy!
