Overnight Banana French Toast Casserole

INGREDIENTS:

  • 1 lb loaf French bread, cubed
  • 8 large eggs
  • 1 1/2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 tablespoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 6-7 bananas, 1 sliced, the rest chopped
  • FOR THE STREUSEL TOPPING:
  • 3/4 cup all-purpose flour
  • 3/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup salted butter, chopped

  1. Grease a 9×13-inch baking dish and preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the eggs, whole milk, heavy cream, granulated sugar, brown sugar, vanilla extract, and ground cinnamon. Whisk until well combined.
  3. Add the cubed French bread and chopped bananas to the egg mixture. Stir until all ingredients are evenly coated.
  4. Transfer the mixture to the prepared baking dish and cover tightly with foil. Refrigerate overnight if desired.
  5. Bake the casserole, covered, for 35-40 minutes or until set.
  6. In the meantime, prepare the streusel topping: In a medium bowl, mix together the all-purpose flour, brown sugar, and cinnamon. Add the chopped butter and blend until the mixture resembles coarse crumbs.
  7. Once the casserole is nearly done, remove it from the oven and sprinkle the streusel topping over the top, followed by the sliced banana.
  8. Return the casserole to the oven and bake, uncovered, for an additional 5-10 minutes or until the streusel is golden brown.
  9. Remove from the oven, let it cool slightly, and serve your scrumptious banana French toast casserole!
