INGREDIENTS:
- 1 lb loaf French bread, cubed
- 8 large eggs
- 1 1/2 cups whole milk
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 1 tablespoon vanilla extract
- 2 teaspoons ground cinnamon
- 6-7 bananas, 1 sliced, the rest chopped
- FOR THE STREUSEL TOPPING:
- 3/4 cup all-purpose flour
- 3/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 cup salted butter, chopped

- Grease a 9×13-inch baking dish and preheat the oven to 350°F (175°C).
- In a large bowl, combine the eggs, whole milk, heavy cream, granulated sugar, brown sugar, vanilla extract, and ground cinnamon. Whisk until well combined.
- Add the cubed French bread and chopped bananas to the egg mixture. Stir until all ingredients are evenly coated.
- Transfer the mixture to the prepared baking dish and cover tightly with foil. Refrigerate overnight if desired.
- Bake the casserole, covered, for 35-40 minutes or until set.
- In the meantime, prepare the streusel topping: In a medium bowl, mix together the all-purpose flour, brown sugar, and cinnamon. Add the chopped butter and blend until the mixture resembles coarse crumbs.
- Once the casserole is nearly done, remove it from the oven and sprinkle the streusel topping over the top, followed by the sliced banana.
- Return the casserole to the oven and bake, uncovered, for an additional 5-10 minutes or until the streusel is golden brown.
- Remove from the oven, let it cool slightly, and serve your scrumptious banana French toast casserole!
