Make-Ahead Salad Casserole

Ingredients for the Salad:

  • 1 head iceberg lettuce, chopped
  • 1 (8 oz.) package frozen peas, thawed and drained
  • 1 cup Swiss cheese, cut into cubes
  • 3 green onions, finely chopped
  • 1/2 cup bacon bits

Ingredients for the Sauce:

  • 1/2 cup mayonnaise
  • 1/2 cup miracle whip
  • 1-2 tablespoons sugar
  • Kosher salt and freshly ground pepper, to taste

Preparation:

  1. In a medium-sized bowl, whisk together mayonnaise, miracle whip, and sugar until well combined. Season with kosher salt and freshly ground black pepper according to your taste.
  2. To prepare the iceberg lettuce, firmly strike the stem of the lettuce on the counter to loosen it, and then push it into the lettuce until it detaches. Remove and discard the stem, then chop the lettuce into bite-sized pieces and place them in a 9×13-inch baking dish.
  3. Add the thawed and drained peas, diced Swiss cheese, and finely chopped green onions to the chopped lettuce. Pour the dressing evenly over the mixture and toss until all the ingredients are thoroughly coated.
  4. Finish by sprinkling the salad with bacon bits, then refrigerate it until you’re ready to serve. If you plan to serve it later, make sure to cover the dish with aluminum foil or plastic wrap. Enjoy your refreshing salad!
