Loaded Meatloaf Casserole

  • 3 cups leftover garlic mashed potatoes
  • 1 pound lean ground beef
  • 1/2 cup finely chopped white onion
  • 3 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 cup Italian breadcrumbs
  • 1 large egg
  • 1 1/2 cups grated sharp cheddar cheese
  • 1/3 cup cooked and crumbled bacon or bacon bits
  • Kosher salt and freshly ground pepper, to taste

PREPARATION

  1. Preheat the oven to 400°F.
  2. In a large bowl, combine the ground beef, onion, garlic, brown sugar, and Worcestershire sauce using two forks or your hands.
  3. Season the mixture generously with salt and pepper, then mix in the breadcrumbs and egg.
  4. Transfer the ground beef mixture to an 8-inch square baking dish and press it into an even layer.
  5. Spread the mashed potatoes on top of the ground beef mixture, then sprinkle with cheddar cheese and bacon bits.
  6. Cover the baking dish with aluminum foil and place it in the oven. Bake for 30 minutes, then remove the foil and bake for another 10-15 minutes, or until the cheese is melted and bubbly.
