Layered Taco Pie

INGREDIENTS:

  • 1 lb ground beef
  • 1 (16 oz) can refried beans
  • 1 packet taco seasoning
  • 1/2 cup water
  • 6 8-inch flour tortillas
  • 2 cups Mexican cheese, grated
  • For toppings:
    • Sour cream
    • Black olives
    • Chopped iceberg lettuce
    • Chopped tomatoes

PREPARATION:

  1. Preheat your oven to 350°F and use nonstick spray to coat an 8-inch springform pan.
  2. In a large skillet, brown the ground beef over medium-high heat. If necessary, drain any excess fat. Add the refried beans, taco seasoning, and water to the skillet. Simmer the mixture until it thickens and most of the liquid has been absorbed, which should take about 5 minutes.
  3. Line the bottom of the prepared springform pan with one of the flour tortillas. Evenly spread 1/5 of the beef and bean mixture over the tortilla and then sprinkle 1/4 cup of grated Mexican cheese on top. Repeat this layering process – tortilla, beef mixture, cheese – until you reach the top, finishing with another tortilla.
  4. Sprinkle the remaining grated cheese evenly over the top tortilla. Bake the assembled dish until the cheese is melted and turns golden brown, which should take around 20 minutes.
  5. Allow the dish to cool for about 5 minutes before slicing it into wedges. Serve it with your favorite toppings like sour cream, black olives, chopped iceberg lettuce, and diced tomatoes. Enjoy!
