Ground Beef Enchiladas

  • 1 pound ground beef
  • 1/2 white onion, finely diced
  • 3 tablespoons taco seasoning
  • 1/4 cup water
  • 10-14 corn tortillas, warmed
  • 2 cups enchilada sauce
  • 3 cups Cheddar cheese, shredded
  • Sour cream, for serving
  • Fresh cilantro, for serving

PREPARATION:

  1. Preheat the oven to 375°F.
  2. In a large skillet over medium heat, cook the ground beef and onions until the beef is no longer pink. Drain any excess fat and add the taco seasoning. Pour in 1/4 cup water and simmer until the liquid has reduced completely. Remove from heat and set aside.
  3. Spread 1/2 cup of enchilada sauce in the bottom of a 9×13-inch baking dish.
  4. Place a portion of the ground beef and some shredded cheddar cheese in the center of each tortilla and roll them tightly.
  5. Arrange the rolled enchiladas seam side down in the baking dish. Pour the remaining enchilada sauce over the top, ensuring that all tortillas are fully covered. Sprinkle the remaining shredded cheese on top.
  6. Bake until the sauce is bubbly and the cheese has melted, approximately 20 minutes.
  7. Serve the enchiladas with sour cream and fresh cilantro. Enjoy!
