Grandma’s Polish Cookies

Yields 3 dozen

INGREDIENTS 4 cups all-purpose flour 2 sticks unsalted butter, cold and cut into cubes 1 teaspoon kosher salt 4 large egg yolks 8 oz evaporated milk 2 teaspoons vanilla extract Oil for frying Powdered sugar

PREPARATION In a large bowl, combine flour and salt. Cut in the cubed butter until the mixture resembles crumbs. In another bowl, beat egg yolks until foamy. Stir in evaporated milk and vanilla extract. Add this mixture to the flour mixture and stir until a dough forms. Transfer the dough onto a clean, lightly floured surface. Knead it for about 30 seconds, then divide it into four equal parts. Roll each part into a rectangle, about ¼-inch thick. Cut into four strips of 1 ½ inches width. Make a 2-inch slit lengthwise down the middle of each strip. Pull one end through the slit to create a bow shape. Heat 1-2 inches of oil in an electric skillet or deep frying pan. Fry the dough strips in batches until they turn golden brown. Place the fried strips on a plate lined with paper towels to absorb excess oil. Sprinkle them with powdered sugar. Repeat the frying and sugaring process until all the dough has been used.
