RECIPE
INGREDIENTS:
For the Fudge:
- 1 cup (2 sticks) unsalted butter, cut into 8 pieces
- 2 cups semi-sweet chocolate chips
- 2 cups milk chocolate chips
- 4 1/2 cups sugar
- 1 (12 oz) can evaporated milk
- 2 teaspoons vanilla extract
For the Topping:
- 1 cup evaporated milk
- 1 cup granulated sugar
- 3 egg yolks
- 1/2 cup (1 stick) unsalted butter
- 1 1/2 cups sweetened flaked coconut
- 1 cup chopped pecans or walnuts
PREPARATION
Creating the Fudge:
- Begin by greasing a 9×13-inch pan with either butter or nonstick spray, then set it aside.
- In a large bowl, combine the 2 sticks of cut-up butter and both types of chocolate chips. Set this mixture aside.
- In a saucepan, bring together the granulated sugar and evaporated milk. Over medium heat, let it come to a boil, continuously stirring for about 10 minutes.
- Pour the hot sugar and milk mixture over the butter and chocolate chips in the large bowl.
- With an electric mixer, beat the mixture for 3 minutes until it becomes smooth and creamy. Add the vanilla extract and continue to beat until well combined.
- Spread this fudge mixture evenly into the prepared 9×13-inch pan, smoothing the top as needed. Allow the fudge to chill in the refrigerator for 1 hour before adding the topping.
Preparing the Topping:
- In a large saucepan over medium heat, combine the evaporated milk, granulated sugar, and egg yolks. Bring this mixture to a boil, and cook until it thickens, which typically takes about 6-8 minutes.
- Remove the saucepan from heat and stir in the sweetened flaked coconut and chopped pecans or walnuts. Let the mixture cool before spreading it evenly over the chilled fudge.
- With the topping in place, slice the fudge, serve, and enjoy the delightful treat!
