French Onion Chicken

  • 2 pounds Vidalia onions, sliced
  • 2 pounds boneless, skinless chicken breasts or thighs
  • 2 cups beef broth
  • 1 cup swiss cheese, grated
  • 1/3 cup extra-virgin olive oil, divided
  • 2 tablespoons all-purpose flour
  • 2 teaspoons balsamic vinegar
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • Kosher salt and freshly ground pepper, to taste

Instructions:

  1. Begin by preheating the oven to 350ยบ F.
  2. Heat 2 tablespoons of olive oil in a large, oven-proof pan or skillet over medium heat. Add the sliced onions and cook them with occasional stirring for about 15-20 minutes or until they become soft and caramelized. Season the onions with salt during cooking.
  3. Add the balsamic vinegar to the caramelized onions and continue cooking for another 3-5 minutes until the onions turn darkened. Be cautious not to burn them. Transfer the caramelized onions to a medium-sized bowl.
  4. In the same skillet, heat the remaining olive oil over medium-high heat.
  5. Season the chicken breasts or thighs with salt, pepper, thyme, and sage. Sear the chicken pieces in the skillet until they turn golden brown on both sides. Once done, remove the chicken from the skillet and set them aside.
  6. Pour the beef broth into the skillet and bring it to a boil while scraping off any browned bits stuck to the bottom of the pan.
  7. Lower the heat to medium-low and whisk in the all-purpose flour, ensuring it blends smoothly with the broth. Cook the mixture for 5-7 minutes until it thickens.
  8. Return the seared chicken and caramelized onions to the skillet. Stir them into the beef gravy mixture.
  9. Sprinkle the grated Swiss cheese evenly over the chicken and onions in the skillet.
  10. Place the skillet in the preheated oven and bake until the cheese is melted and bubbly, and the chicken is thoroughly cooked.
  11. Once done, remove the skillet from the oven and serve the dish hot. Enjoy your flavorful chicken and onion bake!
