Do-Nothing Cake

Serving: 12-16 Total Time: 1 hour and 10 minutes

INGREDIENTS Cake:

  • 1 can (8 or 11 oz.) crushed pineapple, undrained
  • 1 box (15.25 oz) yellow cake mix
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1 cup water
  • 1 teaspoon vanilla extract Frosting:
  • 1 cup sugar
  • 1 cup shredded coconut
  • 1 cup walnuts or pecans, roughly chopped
  • 3/4 cup evaporated milk
  • 1/2 cup (1 stick) unsalted butter

  1. Preheat the oven to 350ยบ F and lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a mixing bowl, combine the cake mix, eggs, vanilla, oil, and water. Beat until moistened. Stir in the crushed pineapple and beat until well blended.
  3. Pour the batter into the greased baking dish and place it in the oven.
  4. Bake for 30-40 minutes, or until a toothpick inserted in the center comes out clean.
  5. During the last 15 minutes of baking, combine the sugar, evaporated milk, and butter in a large saucepan over medium heat. Stir continuously until well combined.
  6. Turn off the heat and stir in the coconut and chopped walnuts.
  7. Once the cake is done, immediately poke holes all over it, then pour the frosting over the top.
  8. Allow the cake to cool, then slice, serve, and enjoy!
