INGREDIENTS Cake:
- 1 can (8 or 11 oz.) crushed pineapple, undrained
- 1 box (15.25 oz) yellow cake mix
- 3 large eggs
- 1/3 cup vegetable oil
- 1 cup water
- 1 teaspoon vanilla extract Frosting:
- 1 cup sugar
- 1 cup shredded coconut
- 1 cup walnuts or pecans, roughly chopped
- 3/4 cup evaporated milk
- 1/2 cup (1 stick) unsalted butter

- Preheat the oven to 350ยบ F and lightly grease a 9×13-inch baking dish with butter or non-stick spray.
- In a mixing bowl, combine the cake mix, eggs, vanilla, oil, and water. Beat until moistened. Stir in the crushed pineapple and beat until well blended.
- Pour the batter into the greased baking dish and place it in the oven.
- Bake for 30-40 minutes, or until a toothpick inserted in the center comes out clean.
- During the last 15 minutes of baking, combine the sugar, evaporated milk, and butter in a large saucepan over medium heat. Stir continuously until well combined.
- Turn off the heat and stir in the coconut and chopped walnuts.
- Once the cake is done, immediately poke holes all over it, then pour the frosting over the top.
- Allow the cake to cool, then slice, serve, and enjoy!
