  1. When you’re ready to bake, preheat the oven to 350°F and grease a baking sheet with nonstick spray.
  2. In a large mixing bowl, use an electric mixer to beat together the softened butter, cream cheese, sugars, egg, and vanilla on medium-high speed until the mixture becomes light and fluffy, which usually takes about 5 minutes.
  3. Scrape down the sides of the bowl, add the cocoa powder, and beat again on medium-high speed until everything is well incorporated.
  4. Add the flour, cornstarch, baking soda, and salt, and beat until just combined.
  5. Stir in the chocolate chips, and then scoop out the dough in 1/4 cup portions. Roll each portion into balls, flatten them slightly, and place them on the prepared baking sheet, making sure to leave about 2 inches of space between each cookie.
  6. Cover the baking sheet with plastic wrap and refrigerate the dough for at least 2 hours.
  7. Bake the cookies until the edges have set but the tops still appear slightly glossy, which usually takes about 10 minutes. Be cautious not to over bake them, as they will firm up more as they cool.
  8. Allow the cookies to cool on the baking sheet for 10 minutes before serving. Enjoy!
