Cowboy Stew

Serving: 6 Preparation Time: 15 minutes Cooking Time: 1 hour

INGREDIENTS

  • 4 slices of bacon, diced
  • 2 (12 oz) packages of kielbasa sausage, sliced into 1/2-inch pieces
  • 1 pound of 80/20 ground beef
  • 1 white onion, finely diced
  • 2-3 cloves of garlic, minced
  • 3 tablespoons of all-purpose flour
  • 1 1/2 teaspoons of chili powder
  • 1 (14.5 oz) can of crushed tomatoes, with juices
  • 2 (16 oz each) cans of baked beans
  • 1 (7 oz) can of chopped green chiles, with juices
  • 1 (15 oz) can of sweet corn, with juices
  • 2 large russet potatoes, peeled and chopped into 1/2-inch cubes
  • 1 cup of water
  • Freshly chopped parsley, for garnish
  • Kosher salt and freshly ground black pepper, to taste

  1. In a large pot, cook the diced bacon until crispy. Transfer the cooked bacon to a plate lined with paper towels to drain excess fat.
  2. In the same pot with the bacon drippings, brown the sliced kielbasa sausage on both sides. Adjust the heat if necessary. Once browned, transfer the sausage to the plate with the bacon.
  3. Add the ground beef and diced onion to the pot. Cook until the beef is no longer pink, then add the minced garlic and cook for an additional minute.
  4. Season the beef mixture with salt and pepper, then sprinkle the flour and chili powder over it. Stir well and cook for about a minute.
  5. Add the crushed tomatoes, baked beans, chopped green chiles, sweet corn, cubed potatoes, cooked bacon, cooked sausage, and water to the pot. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for approximately an hour, stirring occasionally.
  6. Adjust the seasoning as needed and add more water if the stew is too thick. Serve hot, garnished with freshly chopped parsley. Enjoy!
