Cinnamon Blondies

Serving Size: 12-16 servings Preparation Time: 45 minutes

INGREDIENTS:

  • 2 cups all-purpose flour
  • 1 3/4 cups packed brown sugar
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 2 large eggs
  • 1 tablespoon cinnamon
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground nutmeg

  • 3 tablespoons sugar
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (optional)

PREPARATION:

  1. Preheat the oven to 350ยบ F and optionally line a square baking dish with aluminum foil or parchment paper.
  2. In a medium saucepan over medium heat, melt the butter and brown sugar together until combined, then remove from heat.
  3. In a separate bowl, whisk together the flour, cinnamon, baking powder, baking soda, and nutmeg, and set aside.
  4. Once the brown sugar-butter mixture has slightly cooled, mix it into the flour mixture, then beat in the eggs one at a time and stir in the vanilla extract.
  5. After all the ingredients are incorporated, pour the mixture into the prepared baking sheet.
  6. Place the baking dish in the oven and bake for 30-35 minutes, or until a toothpick inserted in the center comes out mostly clean. Remove from the oven and let cool for 5-10 minutes.
  7. For the topping, combine sugar, cinnamon, and nutmeg (if using) in a small bowl.
  8. Brush the blondies with melted butter, then sprinkle with the cinnamon-sugar mixture.
  9. Remove from the baking dish, slice, serve, and enjoy!
