Cheesy Hot Corn Dip

Ingredients:

  • 3 cups corn kernels
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 cups grated Monterey Jack cheese
  • 1 jalapeno pepper, finely chopped (seeds removed for milder heat)
  • 8 ounces cream cheese, softened
  • 3/4 cup sour cream
  • 1/2 cup mayonnaise
  • 1 teaspoon salt
  • 1 (4 oz) can chopped green chiles

Preparation:

  1. Preheat your oven to 350°F.
  2. In a large skillet over high heat, melt 2 tablespoons of butter with 1 tablespoon of olive oil. Add the corn and minced garlic, sautéing until the corn develops a beautiful golden brown color. If needed, work in batches to avoid overcrowding the pan. Transfer the browned corn to a large mixing bowl.
  3. In the same skillet, add the remaining olive oil, and sauté the diced green and red bell peppers until they become tender, which should take approximately 2 minutes. Add the cooked peppers to the bowl with the corn.
  4. To the same bowl, add half of the grated Monterey Jack cheese, the finely chopped jalapeno (adjust to your preferred heat level), softened cream cheese, sour cream, mayonnaise, salt, and the can of chopped green chiles. Thoroughly combine all the ingredients.
  5. Transfer the mixture to a baking dish and evenly top it with the remaining grated Monterey Jack cheese.
  6. Bake the dish in the preheated oven for approximately 30 minutes, until it achieves a golden brown hue and a delightful bubbly texture.
