Buttered Crumb Cauliflower

Ingredients:

  • 1 large head of cauliflower, broken into florets
  • 1/3 cup cubed butter
  • 1 tablespoon lemon juice
  • 1/4 cup dry bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup grated Asiago cheese
  • 2 tablespoons minced fresh parsley
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Instructions:

  1. Start by boiling the cauliflower florets in one inch of water for approximately 10-12 minutes or until they are tender when pierced with a fork. Drain the cauliflower and set it aside.
  2. Preheat your oven to 350°F (175°C).
  3. In a small bowl, combine the dry bread crumbs, grated Parmesan cheese, grated Asiago cheese, minced fresh parsley, salt, and pepper.
  4. In a small saucepan, brown the cubed butter over medium-low heat for about 5 minutes, stirring constantly. Once it turns brown, remove it from the heat and stir in the lemon juice.
  5. Pour the browned butter and lemon juice mixture over the cauliflower in a deep baking pan or casserole dish.
  6. Sprinkle the breadcrumb mixture evenly over the cauliflower.
  7. Place the baking dish in the preheated oven and bake for 10-15 minutes or until the cauliflower begins to brown on top.
