Breakfast Biscuit Bake

Delicious Breakfast Biscuit Sandwiches

Makes 8 sandwiches

Ingredients:

  • 1 package containing 8 store-bought biscuit dough (without flaky layers)
  • 1 stick of melted butter
  • 8 whole eggs, whisked
  • 1/2 cup of thinly sliced green onions
  • 12 slices of bacon, cooked and halved
  • 8 unwrapped slices of American cheese
  • Optional Drizzle of honey or sriracha

Directions:

  1. Start by preheating your oven to 350°F.
  2. Place the biscuit dough in a 9×13-inch casserole dish and bake until they become golden brown. Let them cool for 2-3 minutes, and then carefully remove the tops from all the biscuits.
  3. In a small sauté pan, cook the eggs over medium-low heat. Season them with salt and pepper. Use a rubber spatula to create large, fluffy egg curds by gently pushing the eggs from the outside toward the center. Continue to break up the eggs and remove the pan from the heat once they are cooked.
  4. Assemble the sandwiches by layering scrambled eggs, followed by 3-4 pieces of bacon, and then top with American cheese slices.
  5. If desired, drizzle the inside of the biscuit tops with honey or sriracha, and then place the biscuit tops back on. Brush the tops of the biscuits with the remaining melted butter, cover with foil, and bake for 8-10 minutes, or until the cheese is perfectly melted.
