Blanco Sauce

Serving: 8-10 Preparation Time: 25 minutes

INGREDIENTS:

  • 1 pound of grated Monterey Jack cheese
  • 1/2 cup of grated extra-sharp cheddar cheese
  • 2 cups of heavy cream
  • 1/2 cup of finely chopped yellow onion
  • 1/4 cup of minced jalapeño (seeds removed)
  • 2 tablespoons of olive oil
  • 2 tablespoons of finely chopped fresh cilantro
  • 1/4 teaspoon of chili powder, plus extra for garnish

  1. In a medium saucepan, heat olive oil over medium-high heat. Sauté the chopped onion and minced jalapeño for 6-8 minutes, or until they become softened.
  2. Pour the heavy cream into the saucepan and bring the mixture to a boil. Then, remove it from the heat and stir in the grated cheeses until they are fully melted and the mixture becomes smooth.
  3. Season the mixture with chili powder and stir in the finely chopped cilantro.
  4. Serve the cheese sauce over burritos or with chips. Optionally, garnish with a sprinkle of additional chili powder.
