INGREDIENTS:
- 1 pound of grated Monterey Jack cheese
- 1/2 cup of grated extra-sharp cheddar cheese
- 2 cups of heavy cream
- 1/2 cup of finely chopped yellow onion
- 1/4 cup of minced jalapeño (seeds removed)
- 2 tablespoons of olive oil
- 2 tablespoons of finely chopped fresh cilantro
- 1/4 teaspoon of chili powder, plus extra for garnish

- In a medium saucepan, heat olive oil over medium-high heat. Sauté the chopped onion and minced jalapeño for 6-8 minutes, or until they become softened.
- Pour the heavy cream into the saucepan and bring the mixture to a boil. Then, remove it from the heat and stir in the grated cheeses until they are fully melted and the mixture becomes smooth.
- Season the mixture with chili powder and stir in the finely chopped cilantro.
- Serve the cheese sauce over burritos or with chips. Optionally, garnish with a sprinkle of additional chili powder.
