Beef Tips with Mushroom Gravy

Ingredients:

  • 3 tablespoons butter
  • 2 lbs sirloin beef tips
  • 2 tablespoons all-purpose flour
  • 1 white onion, diced
  • 8 oz sliced cremini mushrooms
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 beef bouillon cube
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1/2 cup sliced pepperoncinis
  • 1 1/2 cups-2 cups beef stock
  • 2 tablespoons cornstarch
  • Kosher salt and freshly ground black pepper, to taste

Preparation:

  1. Start by seasoning the beef with salt and pepper, then coat it in flour evenly.
  2. In a large skillet over medium-high heat, or in the insert of your Instant Pot if that’s what you’re using, melt the butter. Add the beef in batches and sear it on all sides until it’s nicely browned with a crust. After searing, place the beef on a plate and continue searing the rest of the beef in batches.
  3. Add the diced onions to the skillet and sauté briefly for about 2 minutes. While doing so, scrape up any browned bits from the bottom of the pan using a wooden spoon.
  4. To Make in the Slow Cooker: Transfer the seared beef and onions to a slow cooker. Add the sliced mushrooms, garlic powder, onion powder, dried thyme, dried rosemary, bouillon cube, Worcestershire sauce, bay leaf, pepperoncinis, and 2 cups of beef stock. Cover and cook on high for 3-4 hours or on low for 6-7 hours.
  5. Approximately 30 minutes before the cooking time is up, combine the cornstarch with 3 tablespoons of water. Stir this mixture into the slow cooker, cover, and continue cooking for the remaining 30 minutes. Season with salt and pepper to taste before serving. Enjoy your delicious meal!
