- 1 single pie crust
For the Filling:
- 5 cups (about 2 lbs) apples, peeled and sliced (Granny Smith work well)
- 1 cup granulated sugar, divided
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 3 large eggs
- 1 3/4 cups buttermilk
- 1/2 teaspoon vanilla extract
For the Cinnamon Streusel Topping:
- 1/3 cup all-purpose flour
- 1/3 cup brown sugar
- 1/2 teaspoon cinnamon
- 3 tablespoons chilled butter, cut into small cubes
Preparation:
- Start by preheating your oven to 325°F.
- Roll out the pie dough into a 14-inch circle and use it to line a 9-inch deep-dish pie pan. Fold the edges under and create a fluted edge using your fingers. Place the pie crust in the refrigerator until you’re ready to fill it.
- While the crust chills, let’s prepare the filling. Spray a large nonstick skillet with cooking spray and set it over medium heat. Add the peeled and sliced apples, 1/4 cup of the granulated sugar, ground cinnamon, and ground nutmeg. Cook until the apples become tender, stirring occasionally. This should take about 10 minutes. Spoon the apple mixture into the prepared pie crust.
- In a medium-sized bowl, whisk together the remaining granulated sugar, all-purpose flour, salt, and eggs. Add in the buttermilk and vanilla extract, and continue to whisk until well combined. Pour this mixture over the apples in the pie crust.
- Bake the pie for 30 minutes. While it’s baking, let’s prepare the cinnamon streusel topping.
- In a small bowl, combine the 1/3 cup of all-purpose flour, brown sugar, and cinnamon for the streusel topping. Cut the chilled butter into small cubes and use a pastry blender or two knives to work it into the dry ingredients until you
