INGREDIENTS:
- 1 box (16 oz.) angel food cake mix
- 1 can (20 oz.) crushed pineapple in juice
- 1 tub (12 oz.) cool whip, thawed
- 1 1/2 cups sweetened coconut flakes, divided

- Preheat the oven to 350 degrees and grease a 9×13 baking dish.
- In a large bowl, combine the angel food cake mix, ½ cup of coconut flakes, and crushed pineapple (including the juice). Stir until the mixture is evenly combined. Note: The batter will expand.
- Transfer the batter to the prepared baking dish.
- Bake for 25-28 minutes or until the top is golden brown.
- Allow the cake to cool, then frost it with cool whip and sprinkle the remaining coconut flakes on top.
