Amish Pasta Salad

INGREDIENTS:

  • 1 package (16 oz) of medium shell pasta
  • 3 tablespoons sweet pickle relish, drained
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon celery seed
  • 1 1/2 cups mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup granulated sugar
  • 3 tablespoons yellow mustard
  • 2 teaspoons apple cider vinegar
  • 5 hard-boiled eggs, chopped
  • 3 stalks celery, chopped
  • 1/2 small sweet onion, chopped
  • 1 jar (2 oz) pimentos, drained
  • 1 green bell pepper, chopped
  • Kosher salt and freshly ground black pepper, to taste

  1. Begin by cooking the shell pasta according to the instructions provided on the package. Once cooked, drain the pasta well and set it aside.
  2. In a large mixing bowl, combine the drained sweet pickle relish, garlic powder, celery seed, mayonnaise, sour cream, granulated sugar, mustard, and apple cider vinegar. Whisk these ingredients together until they form a smooth and homogeneous mixture.
  3. Add the cooked pasta, chopped hard-boiled eggs, chopped celery, chopped onion, drained pimentos, and chopped green bell pepper to the bowl. Carefully fold all the ingredients together until they are evenly coated with the dressing.
