2-Minute Microwave Muffins
Ingredients:
- 4 tablespoons all-purpose flour
- 2 tablespoons granulated sugar (or your preferred sweetener)
- 1/8 teaspoon baking powder
- 1/8 teaspoon salt
- 2 tablespoons milk (or a non-dairy alternative)
- 1 tablespoon vegetable oil or melted butter
- 1/4 teaspoon vanilla extract
- Optional mix-ins: chocolate chips, berries, nuts, or spices to taste (about 1 tablespoon)
Instructions:
- Prepare the Mug or Bowl: Choose a microwave-safe mug or small bowl that holds at least 1 cup. Spray it lightly with cooking spray or grease it with a little oil to prevent sticking.
- Combine Dry Ingredients: In the mug or bowl, mix together the flour, sugar, baking powder, and salt until well combined.
- Add Wet Ingredients: Pour in the milk, vegetable oil (or melted butter), and vanilla extract. Stir until all the ingredients are just combined; be careful not to overmix.
- Add Mix-ins (if using): Gently fold in any optional mix-ins like chocolate chips, berries, or nuts.
- Microwave: Microwave the mug on high for about 40-60 seconds. Start with 40 seconds and check for doneness – the muffin should be puffy and set in the middle. If it’s not done, microwave in additional 10-second intervals until fully cooked.
- Cool & Enjoy: Let it cool for a minute before enjoying, then dig in straight from the mug or remove it onto a plate.
Serving Suggestion:
Enjoy your warm muffin with a pat of butter or a drizzle of honey on top, or pair it with your favorite jam for an extra treat.
Notes:
- Customization: Feel free to experiment with different flavors or additions, such as cinnamon, pumpkin spice, or shredded coconut.
- Cleanup: This one-bowl recipe means minimal cleanup, making it a quick and tasty option anytime!
Enjoy your microwave muffin without the wait!
